- 1/2 onions

- 3-4 cloves of garlic

- 3 green chilies

- 1 tomato

- Oil or butter

- Cornflour

- Milk

- Grated cheese

- Salt

- Pepper

- Oregano

- Chili flakes

- Piri piri seasoning (if available)


Recipe

1. Boil the Spaghetti: Cook the spaghetti on medium flame until al dente. Meanwhile, heat some butter or oil in a pan on medium flame. Chop the tomato into 4 pieces and the chilies into big 3-4 pieces each. Roast them in the pan.

2. Prepare the Veggies: While the tomatoes and chilies cook, finely chop your onions and garlic. Check if the tomatoes are tender and soft (or roasted). If not, wait until they are ready. Utilize this time to wash dishes if you like!

3. Blend the Sauce: Once the tomatoes are done, put them and the chilies in a blender with some cold water and blend until smooth. You can let them cool down before blending if needed.

4. Sauté Onions and Garlic: In the same pan, add some butter and sauté your onions and garlic until golden brown. Add cornflour and mix well. Pour in milk and break any clumps. Meanwhile, preheat the oven to 200°C.

5. Thicken the Sauce: Let the sauce heat up and thicken. Once it reaches a gooey consistency, add the blended tomato chili puree.

6. Season the Sauce: Mix everything well. Add your seasonings: pepper, salt, oregano, chili flakes, and piri piri.
